As part of the ethnographic fair “Southern Bazaar”, which was recently held in the Astrakhan region, the leading specialists of the local technological college shared with the guests of the festival unusually tasty dishes made according to old recipes.
In particular, among the delicacies brought to the attention of the public was a nardik - the so-called “honey” made from watermelon juice and pulp. According to a long-standing technology, the insides of the watermelon were boiled to a thick and soft state, so that the mass acquired an appetizing golden-coffee color.
It should be noted that this dessert was extremely popular among middle-aged Russians several centuries ago. Astrakhan peasants were actively preparing nardik from fresh watermelons, just plucked on a melon.
However, this unusual sweet did not get wide popularity. In particular, because the watermelon “honey”, based on authentic recipes, should be cooked for four days, evaporating all the liquid from the pulp.
It is noteworthy that in the process of holding the Southern Bazaar fair, the technologists of the local technical school pleased the guests of the event with such delicacies as fresh watermelon, watermelon jam with lemon and sugar, and many other culinary masterpieces.
It will not be superfluous to add that the college staff will work out all these recipes in the classroom with students, and the finished products of beginner cooks will be sold in the cafeteria of the educational institution.
